"A German Christmas treat. This recipe was handed down by my great grandmother to my grandmother to my mother."

Ingredients

  • 1 1/2 cups milk
  • 1/2 cup white sugar
  • 3/4 cup butter
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 egg yolks
  • 5 2/3 cups all-purpose flour
  • 1 ounce active dry yeast
  • 1/2 teaspoon ground cardamom
  • 1/2 cup raisins
  • 1/2 cup candied citrus peel
  • 1/2 cup candied cherries

Directions

  1. Scald milk. Add sugar, butter, and salt, and cool to lukewarm. Add 2 whole eggs, and 2 yolks. Mix.
  2. Add to 3 cups flour and yeast in food processor. Process and let rise until double.
  3. Add cardamom, raisins, citron, and cherries, and rest of flour. Process and put on floured board and knead. Let rise in greased bowl.
  4. When risen, cut into 3-4 pieces. Roll each into an oval, butter, and fold in half lengthwise. Put on greased baking sheet, cover, and let rise until double.
  5. Bake at 375 degrees F (190 degrees C) for 25 minutes.
  6. Remove to rack. When cool, frost with white butter frosting and decorate with candied cherry halves and sprinkle with colored sugar.

"This omelet is so easy and delicious. It bakes in the oven, so there is no watching the stove. My son loves to make it for us."

Ingredients

  • 6 eggs
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded Cheddar cheese

Directions

  1. Preheat oven to 450 degrees F (230 degrees C). Lightly grease a 9x13 inch baking pan.
  2. In a blender, combine eggs, milk, flour, salt and pepper; cover and process until smooth. Pour into prepared baking pan.
  3. Bake in preheated oven until set, about 20 minutes. Sprinkle with cheese.
  4. Carefully loosen edges of omelet from pan. Starting from the short edge of the pan, carefully roll up omelet. Place omelet seam side down on a serving plate and cut into 6 equal sized pieces.

"Tender baby spinach, Parmesan cheese, and a little nutmeg are cooked with eggs. A carb-cutter's perfect start for the day."

Ingredients

  • 2 eggs
  • 1 cup torn baby spinach leaves
  • 1 1/2 tablespoons grated Parmesan cheese
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon ground nutmeg
  • salt and pepper to taste

Directions

  1. In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.
  2. In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.

"We have made this French Toast for Christmas brunch for twenty four years! It originally came from the East Coast. If you like your French toast firmer, then cut back on the milk."

Ingredients

  • 5 eggs, lightly beaten
  • 1 1/2 cups milk
  • 1 cup half-and-half cream
  • 1 teaspoon vanilla extract
  • 1/2 (1 pound) loaf French bread, cut diagonally in 1 inch slices
  • 1/2 cup butter, melted
  • 1 cup light brown sugar
  • 2 tablespoons maple syrup
  • 1 cup chopped pecans

Directions

  1. In a large bowl, whisk together eggs, milk, cream and vanilla. Dip bread slices into egg mixture and place in a lightly greased 9x13 inch baking pan. Refrigerate overnight.
  2. The next morning: Preheat oven to 350 degrees F (175 degrees C).
  3. In a small bowl, combine butter, sugar, maple syrup and pecans. Spoon mixture over bread.
  4. Bake in preheated oven until golden, about 40 minutes. Let stand 5 minutes before serving.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • 3 egg yolks
  • 3 egg whites

Directions

  1. In a medium bowl, combine flour and baking powder. Stir in milk and egg yolk until smooth.
  2. In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
  3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

Ingredients

  • 2 tablespoons olive oil
  • 4 eggs, beaten
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 avocado, peeled and sliced
  • 1/4 cup salsa
  • salt and ground black pepper to taste

Directions

  1. Heat olive oil in a small pan over medium heat. Cook and stir eggs until eggs are set, 3 to 5 minutes.
  2. Place black beans in a microwave-safe bowl. Heat on High in the microwave until warm, about 1 minute.
  3. Divide warmed black beans between two bowls.
  4. Top each bowl with scrambled eggs, avocado, and salsa. Season with salt and black pepper.

  • 1 (8 ounce) package vegetarian sausage links (such as Morningstar Farms(R))
  • 1/2 cup water, or more as needed
  • 4 cups shredded sweet potatoes
  • 1/4 cup butter, melted
  • 1 1/2 (8 ounce) packages shredded, reduced-fat mild Cheddar-mozzarella cheese blend
  • 1/2 cup finely chopped onion
  • 1 cup finely sliced fresh spinach leaves
  • 1 (16 ounce) container low-fat small curd cottage cheese
  • 8 jumbo eggs

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
  2. Place sausage in a large skillet and pour in about 1/4 inch of water; cook sausage over medium heat until water evaporates and sausages are evenly browned, 10 to 15 minutes. Crumble cooked sausages into a bowl.
  3. Mix sweet potatoes and butter together in a bowl; evenly spread into the bottom of the prepared 9x13-inch dish.

  • 10 eggs, beaten
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 (7 ounce) can diced green chile peppers, drained
  • 1 (16 ounce) container low-fat cottage cheese
  • 1 cup shredded Cheddar cheese
  • 1/4 cup melted butter

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
  2. In a large bowl, mix the eggs, flour, baking powder, and salt. Stir in the green chile peppers, cottage cheese, Cheddar cheese, and melted butter. Pour into the prepared baking dish.
  3. Bake 15 minutes in the preheated oven. Reduce heat to 325 degrees F (165 degrees C), and continue baking for 35 to 40 minutes. Cool slightly, and cut into small squares.

  • 1/2 tablespoon butter
  • 1 slice white bread
  • 1 egg

Directions

  1. Butter both sides of bread. Cut a circular hole in the center of the slice of bread, about 2 1/2 inches in diameter.
  2. Heat a frying pan or griddle on medium-high heat. When the frying pan is hot, place the bread into the pan and let it brown for one minute. Flip the toast over and let the other side brown for one minute.
  3. Break the egg into the hole in the bread. Cook for 2 minutes, or until the egg is cooked to the consistency you prefer.

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Over medium-low heat melt butter in a large saucepan. Add onions, garlic and broccoli. Cook slowly, stirring occasionally until the vegetables are soft. Spoon vegetables into crust and sprinkle with cheese.
  3. Combine eggs and milk. Season with salt and pepper. Stir in melted butter. Pour egg mixture over vegetables and cheese.
  4. Bake in preheated oven for 30 to 50 minutes, or until center has set.

  • 2 avocados - peeled, pitted, and mashed
  • 4 (10 inch) flour tortillas, warmed
  • 2/3 cup dry curd cottage cheese
  • 1/4 cup ketchup

Directions

  1. In a bowl, beat together the eggs, milk, and cheese. Season with salt. Pour into a skillet over medium heat. Cook and stir until scrambled.
  2. Season mashed avocados with salt. Place tortillas one at a time in a separate skillet over medium heat, and cook just until warm. Spread equal amounts of the avocado mixture on one side of each warmed tortilla. Layer with equal amounts cottage cheese and scrambled eggs. Roll into burritos and serve with ketchup.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup sliced halved zucchini
  • 3 green onions, chopped
  • 1/2 sweet onion, thinly sliced
  • 2 roma (plum) tomatoes, chopped
  • 1/2 cup chopped fresh mushrooms
  • 3 cups chopped baby spinach
  • 1/2 lemon, juiced
  • Worcestershire sauce to taste
  • hot sauce to taste
  • garlic powder to taste
  • salt and ground black pepper to taste
  • 1 1/2 cups liquid egg substitute
  • 1/4 cup shredded Cheddar cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray an 8x8 inch baking dish with cooking spray.
  2. Heat the olive oil in a skillet over medium-high heat. Place zucchini, green onions, onion, tomatoes, mushrooms, and spinach in the skillet. Sprinkle with lemon juice, Worcestershire sauce, and hot sauce. Season with garlic powder, salt, and pepper. Cook until tender. Transfer to the prepared baking dish. Pour egg substitute over the vegetables in the dish. Top with cheese.
  3. Bake 20 minutes in the preheated oven, or until egg substitute is set and cheese is melted. Cut with a spatula and enjoy!

  • 2 teaspoons white sugar
  • 1 pinch salt
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 cups milk

Directions

  1. Beat eggs until fluffy; beat in sugar and salt. In a separate bowl, stir flour and baking powder together. Stir milk and flour mixture alternately into eggs, starting and ending with milk.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Do not turn pancake until tiny holes appear all over the uncooked side (top) of the pancake in the pan. Brown on both sides and serve hot.

"Chakchouka (also called shakshouka) is a Tunisian and Israeli dish of tomatoes, onions, pepper, spices, and eggs. It's usually eaten for breakfast or lunch, but I think it's tasty anytime. And it's easy to make. It is similar to the Turkish dish 'Menemen' and to the Latin American breakfast dish 'Huevos Rancheros.'"

Ingredients

  • 3 tablespoons olive oil
  • 1 1/3 cups chopped onion
  • 1 cup thinly sliced bell peppers, any color
  • 2 cloves garlic, minced, or to taste
  • 2 1/2 cups chopped tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 hot chile pepper, seeded and finely chopped, or to taste
  • 4 eggs

Directions

  1. Heat the olive oil in a skillet over medium heat. Stir in the onion, bell peppers, and garlic; cook and stir until the vegetables have softened and the onion has turned translucent, about 5 minutes.
  2. Combine the tomatoes, cumin, paprika, salt, and chile pepper into a bowl and mix briefly. Pour the tomato mixture into the skillet, and stir to combine.
  3. Simmer, uncovered, until the tomato juices have cooked off, about 10 minutes. Make four indentations in the tomato mixture for the eggs. Crack the eggs into the indentations. Cover the skillet and let the eggs cook until they're firm but not dry, about 5 minutes.

  • 1/2 cup light mayonnaise
  • 1/2 cup milk
  • 4 eggs, lightly beaten
  • 8 ounces shredded reduced-fat Cheddar cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1/4 cup chopped onion
  • 1 (9 inch) unbaked pie shell

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with foil.
  2. In a large bowl, whisk together mayonnaise and milk until smooth. Whisk in eggs. Layer spinach, cheese, and onion in pie shell, making several layers of each. Pour in egg mixture. Place quiche on prepared cookie sheet. Cover quiche with foil.
  3. Bake in preheated oven for 45 minutes. Remove cover, and bake 10 to 15 minutes, or until top is golden brown and filling is set.

  • 1/2 cup soy milk
  • 1/2 cup water

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  2. Sift the flour, sugar, baking powder and salt into a large bowl. Cut in margarine until the mixture is the consistency of large grains of sand. I like to use my hands to rub the margarine into the flour. Stir in poppy seeds, lemon zest and lemon juice. Combine the soy milk and water, and gradually stir into the dry ingredients until the batter is moistened, but still thick like biscuit dough. You may not need all of the liquid.
  3. Spoon 1/4 cup sized plops of batter onto the greased baking sheet so they are about 3 inches apart.
  4. Bake for 10 to 15 minutes the preheated oven, until golden.

Ingredients

  • 8 ounces pitted prunes
  • 8 ounces dried apricots
  • 1/3 cup raisins
  • 1 (15 ounce) can pineapple chunks, undrained
  • 1 (16 ounce) can cherry pie filling
  • 1/4 cup dry sherry
  • 1 cup water
  • 1/3 cup blanched slivered almonds

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a deep baking dish, mix together prunes, dried apricots, raisins, and pineapple chunks. In a separate bowl, combine cherry pie filling, sherry, and water. Pour over the fruit, and blend thoroughly. Stir in almonds.
  3. Cover, and bake in preheated oven for 1 1/2 hours.
