Traditional Style Vegan Shepherd's Pie

"This is a traditional-style shepherd's pie like my Mum used to make, but completely vegan. All amounts are approximate and can be altered to your tastes!"

Ingredients

  • Mashed potato layer:
  • 5 russet potatoes, peeled and cut into 1-inch cubes
  • 1/2 cup vegan mayonnaise
  • 1/2 cup soy milk
  • 1/4 cup olive oil
  • 3 tablespoons vegan cream cheese substitute (such as Tofutti (R))
  • 2 teaspoons salt
  • Bottom layer:
  • 1 tablespoon vegetable oil
  • 1 large yellow onion, chopped
  • 2 carrots, chopped
  • 3 stalks celery, chopped
  • 1/2 cup frozen peas
  • 1 tomato, chopped
  • 1 teaspoon Italian seasoning
  • 1 clove garlic, minced, or more to taste
  • 1 pinch ground black pepper to taste
  • 1 (14 ounce) package vegetarian ground beef substitute
  • 1/2 cup shredded Cheddar-style soy cheese

Directions

  1. Place the potatoes in a pot, cover with cold water, and bring to a boil over medium-high heat. Turn the heat to medium-low, and boil the potatoes until tender, about 25 minutes; drain.
  2. Stir the vegan mayonnaise, soy milk, olive oil, vegan cream cheese, and salt into the potatoes, and mash with a potato masher until smooth and fluffy. Set the potatoes aside.
  3. Preheat oven to 400 degrees F (200 degrees C), and spray a 2-quart baking dish with cooking spray.
  4. Heat the vegetable oil in a large skillet over medium heat, and cook and stir the onion, carrots, celery, frozen peas, and tomato until softened, about 10 minutes. Stir in the Italian seasoning, garlic, and pepper.
  5. Reduce the heat to medium-low, and crumble the vegetarian ground beef substitute into the skillet with the vegetables. Cook and stir, breaking up the meat substitute, until the mixture is hot, about 5 minutes.
  6. Spread the vegetarian meat substitute mixture into the bottom of the baking dish, and top with the mashed potatoes, smoothing them into an even layer. Sprinkle the potatoes with the shredded soy cheese.
  7. Bake in the preheated oven until the cheese is melted and slightly browned and the casserole is hot, about 20 minutes.

"I make this quiche without eggs. The tofu gives it a good texture. I've brought it to potlucks where friends aren't vegetarian...no one ever knew! It is always a hit!"

Ingredients

  • 1 (8 ounce) container tofu
  • 1/3 cup 1% milk
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon pepper
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 teaspoon minced garlic
  • 1/4 cup diced onion
  • 2/3 cup shredded Cheddar cheese
  • 1/2 cup shredded Swiss cheese
  • 1 unbaked 9 inch pie crust

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a blender, combine tofu and milk; process until smooth, adding more milk if necessary. Blend in salt and pepper.
  3. In a medium bowl, combine spinach, garlic, onion, Cheddar cheese, Swiss cheese and tofu mixture. Mix well, and pour into prepared pie crust.
  4. Bake in preheated oven for 30 minutes, or until set and golden brown on top. Let stand 5 minutes before cutting.

"I hate tofu but love tempeh and this sandwich is tangy and tasty. My boyfriend and I eat this all the time. It's great because it's vegan for him and I still like it (even though I'm not a vegetarian)."

Ingredients

  • 1 cup barbecue sauce, your choice
  • 1 (8 ounce) package tempeh, crumbled
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, seeded and chopped
  • 1 green bell pepper, seeded and chopped
  • 1 medium onion, chopped
  • 4 kaiser rolls, split and toasted

Directions

  1. Pour the barbeque sauce into a medium bowl. Crumble the tempeh into the sauce, and let it marinate a little, about 10 minutes.
  2. Heat oil in a skillet over medium heat. Add the red and green peppers, and the onion. Cook, stirring frequently until tender. Stir in the tempeh and barbeque sauce, and heat through.
  3. Spoon the tempeh mixture onto kaiser rolls, and serve.

"Here is a simple way of incorporating tofu into your diet. You can certainly play around with this recipe, adding whatever you like, I garnish mine with lime wedges."

Ingredients

  • 1 (14 ounce) package firm tofu, drained
  • 3 tablespoons soy sauce
  • 1 tablespoon mirin (sweetened rice wine)
  • 2 teaspoons sesame oil, or to taste
  • 1 tablespoon rice vinegar
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon minced fresh ginger
  • 1 large tomato, seeded and chopped
  • 1 small red onion, thinly sliced
  • 1/4 cup chopped cilantro
  • 1 tablespoon sesame seeds

Directions

  1. Place tofu between two plates, and weigh down with a heavy book. Allow tofu to drain for 1 hour, pouring out the expelled liquid every 20 minutes.
  2. Whisk together the soy sauce, mirin, sesame oil, and rice vinegar in a small bowl. Heat the oil in a small pan over medium heat, stir in the garlic and ginger, and gently cook until lightly golden; stir into the soy sauce mixture.
  3. Cut tofu into bite-sized pieces, and toss together with the tomato, onion, and cilantro. Pour in the dressing and toss to coat. Garnish with a sprinkle of sesame seeds.

Ingredients

  • 1/4 cup vegetable oil
  • 1/2 cup minced onion
  • 2 (8 ounce) packages tempeh
  • 1/2 cup minced green bell pepper
  • 2 cloves garlic, minced
  • 1/4 cup tomato sauce
  • 1 tablespoon vegetarian Worcestershire sauce
  • 1 tablespoon honey
  • 1 tablespoon blackstrap molasses
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon paprika
  • 1 pinch ground black pepper
  • hamburger buns

Directions

  1. Heat oil in a deep, 10-inch skillet over medium-low heat. Cook the onion in the oil until translucent. Crumble the tempeh into the skillet; cook and stir until golden brown. Add the green pepper and garlic; cook another 2 to 3 minutes.
  2. Stir in the tomato sauce, Worcestershire sauce, honey, molasses, cayenne pepper, celery seed, cumin, salt, coriander, thyme, oregano, paprika, and black pepper; stir. Simmer another 10 to 15 minutes. Spoon hot onto hamburger buns to serve.

Ingredients

  • 1 pound tofu, sliced into 8 even pieces
  • 2 tablespoons soy sauce
  • 2 tablespoons agave nectar
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced fresh ginger
  • 1 tablespoon sesame seeds, or to taste

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly oil a large baking sheet.
  2. Gently press tofu pieces to release as much water as possible. Arrange tofu on the prepared baking sheet.
  3. Whisk soy sauce, agave nectar, sesame oil, garlic, and ginger together in a bowl until marinade is evenly combined. Brush half of the marinade over tofu pieces.
  4. Bake in the preheated oven for 30 minutes. Flip tofu and brush remaining marinade over tofu. Sprinkle sesame seeds over tofu. Continue baking until tofu is crisp, about 30 minutes more. Transfer tofu to a wire rack using a spatula; cool.

Ingredients

  • 3 green onions, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons toasted sesame seeds
  • 1 1/2 teaspoons Korean chile pepper powder, or to taste
  • 1 teaspoon white sugar
  • 1/2 teaspoon toasted Asian sesame oil
  • 1 1/2 cups steamed Japanese rice
  • 1/2 head of romaine lettuce (heart only), torn into bite-size pieces
  • 1/2 cucumber - peeled, seeded, and chopped
  • 1 (12 ounce) package tofu, sliced

Directions

  1. Mix green onions, soy sauce, sesame seeds, Korean red pepper powder, sugar, and sesame oil together in a bowl until evenly combined.
  2. Place rice in a serving bowl. Toss lettuce and cucumber together and place onto rice. Arrange tofu over lettuce and cucumber. Drizzle sesame mixture over tofu to taste.

"A simple, delicious, and versatile dish that is naturally vegan, but can be easily altered to accommodate both vegan and omnivorous eaters--excellent for family dinners and gathering where there will be people with a variety of food preferences."

Ingredients

  • 2 1/2 cups vegetable broth
  • 3/4 cup dry lentils
  • 1/2 teaspoon salt
  • 1 bay leaf
  • 1/4 cup olive oil
  • 1 large red onion, chopped
  • 1 teaspoon chopped fresh thyme
  • 1/2 teaspoon chopped fresh oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces vegan sausage, cut into 1/4 inch slices (optional)
  • 1 bunch kale, stems removed and leaves coarsely chopped
  • 1 (12 ounce) package rotini pasta
  • 2 tablespoons nutritional yeast (optional)

Directions

  1. Bring the vegetable broth, lentils, 1/2 teaspoon of salt, and bay leaf to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and cook until the lentils are tender, about 20 minutes. Add additional broth if needed to keep the lentils moist. Discard the bay leaf once done.
  2. As the lentils simmer, heat the olive oil in a skillet over medium-high heat. Stir in the onion, thyme, oregano, 1/2 teaspoon of salt, and pepper. Cook and stir for 1 minute, then add the sausage. Reduce the heat to medium-low, and cook until the onion has softened, about 10 minutes.
  3. Meanwhile, bring a large pot of lightly salted water to a boil over high heat. Add the kale and rotini pasta. Cook until the rotini is al dente, about 8 minutes. Remove some of the cooking water, and set aside. Drain the pasta, then return to the pot, and stir in the lentils, and onion mixture. Use the reserved cooking liquid to adjust the moistness of the dish to your liking. Sprinkle with nutritional yeast to serve.

  • 2 large red onions, cut into wedges
  • 2 cloves garlic, chopped, or more to taste
  • canola oil cooking spray (optional)
  • Cream Sauce:
  • 2 cups plain soy milk
  • 1 (14 ounce) package firm tofu, cut into cubes
  • 1/2 (8 ounce) package shredded mozzarella-style vegan cheese (such as Daiya(R))
  • 1/4 cup nutritional yeast
  • 2 tablespoons onion powder
  • 1 tablespoon lemon juice, or more to taste
  • 1 tablespoon dried basil
  • 1 tablespoon dried marjoram
  • 1 tablespoon dried oregano
  • 1 tablespoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper, or more to taste
  • 3 large large kale leaves, minced, or more to taste
  • 1 cup cherry tomatoes, halved

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Spread cauliflower, onions, and garlic onto a large baking sheet. Spray canola oil spray over cauliflower mixture.
  3. Bake in the preheated oven until browned and tender, 30 to 45 minutes. Transfer cauliflower mixture to a 9x13-inch baking dish. Reduce oven temperature to 300 degrees F (150 degrees C).
  4. Blend soy milk, tofu, vegan cheese, nutritional yeast, onion powder, lemon juice, basil, marjoram, oregano, parsley, garlic powder, and black pepper in a food processor or blender until sauce is creamy.
  5. Pour sauce into a saucepan and cook over medium-low heat until warmed, about 5 minutes. Add kale to sauce and cook until kale is wilted, about 5 minutes. Pour sauce over cauliflower mixture and add tomatoes; mix well.
  6. Bake in the oven until bubbling and lightly browned, about 40 minutes.

"I grew up vegetarian and love Mexican food. As a kid, we used to have bean tacos. Inspired by a family friend, and by my maturing taste buds, I created this recipe to liven up my vegetarian taco experience. This is, of course, just the filling, and you can add whatever toppings to your taco that you want. This recipe tends to match better with red taco sauces than with green ones. Extra filling can be reheated later or eaten cold as a mango tofu salsa. Enjoy!"

Ingredients

  • 3 tablespoons coconut oil, or more as needed
  • 1 onion, chopped
  • 1 serrano chile pepper, chopped
  • 2 cloves garlic, finely chopped
  • 2 (14 ounce) packages tofu, cut into chunks
  • 1 bunch fresh cilantro, finely chopped (stems and leaves separated)
  • 1/4 (1 ounce) package taco seasoning mix, or more to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 mangos, peeled and cut into small chunks
  • 1/4 (1 ounce) package taco seasoning mix
  • 1 pinch chili powder, or to taste
  • salt to taste
  • 1 teaspoon ground cumin, or to taste (optional)
  • 1 teaspoon ground coriander, or to taste (optional)

Directions

  1. Cover the bottom of a skillet with coconut oil; warm over medium heat. Add onion, serrano pepper, and garlic; cook and stir until onion is lightly browned, about 10 minutes. Add tofu; stir to coat.
  2. Stir cilantro stems, 1/4 package taco seasoning, 1 teaspoon cumin, and 1 teaspoon coriander into tofu mixture; cook and stir until fragrant and tofu is cooked through, about 5 minutes. Add mangos and 1/4 package taco seasoning; cook, waiting 3 to 5 minutes before stirring. Add chili powder and salt; stir to coat. Season with more cumin and coriander if desired.
  3. Simmer tofu-mango mixture until most of liquid has evaporated, about 10 more minutes. Stir in cilantro leaves 1 minute before serving.

  • 2 tablespoons corn oil
  • 1 (8 ounce) package tempeh, broken into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 1/2 cups chopped green bell pepper
  • 1 (4.5 ounce) can sliced mushrooms, drained
  • 1/2 cup frozen chopped spinach, thawed and drained
  • 1 tablespoon chopped green chile peppers
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon dried minced onion

Directions

  1. Heat oil in a large skillet over medium heat. Saute tempeh with soy sauce and lime juice until tempeh browns. Stir in bell peppers, mushrooms, spinach, chile peppers, cilantro and dried onion.
  2. Increase heat to medium-high and cook until fluids have reduced, stirring occasionally.

  • 1 (8 ounce) package seitan
  • 1/3 cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon ground black pepper
  • 2 tablespoons tamari
  • 2 tablespoons vegetable oil

Directions

  1. In a small bowl, combine nutritional yeast, garlic powder, coriander, cumin, and black pepper. Dip seitan in tamari, then in the yeast and spice mixture. Set aside.
  2. Heat oil in a skillet over medium heat. Fry seitan in batches until browned on all sides.

  • 1 vegetarian hot dog
  • 1 (6 inch) flour tortilla
  • 1/2 teaspoon margarine
  • 1 slice American cheese

Directions

  1. Place hot dog on a microwave-safe plate and heat on High until warm, about 30 seconds. Place tortilla on a microwave-safe plate, and heat on High until warm, about 15 seconds. Lightly spread the tortilla with margarine. Place the cheese slice on the tortilla, and top with the hot dog. Fold the ends of the tortilla in over the hot dog and roll to close. Heat the tortilla dog in microwave on High until cheese melts, about 30 more seconds.

  • 1 (12 fluid ounce) can tomato juice
  • 5 onions, chopped
  • 3 tablespoons chili powder
  • 1 1/2 tablespoons ground cumin
  • 1 tablespoon garlic powder
  • 2 bay leaves
  • salt and pepper to taste

Directions

  1. In a large pot, combine meat substitute, black beans, kidney beans, diced tomatoes, tomato juice, onions, chili powder, cumin, garlic powder, bay leaves, salt and pepper. Bring to a simmer and cover. Let the chili simmer for at least 1 hour before serving.

  • 1 (12 ounce) package firm tofu - drained, patted dry, and sliced into 4 slices
  • 1 cup bread crumbs
  • 1 teaspoon kelp powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon onion powder or flakes
  • 1 teaspoon salt
  • olive oil, as needed
  • Tartar Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup dill pickle relish
  • 1 tablespoon fresh lemon juice
  • 4 whole wheat hamburger buns, split

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a bowl, toss bread crumbs together with kelp powder, garlic powder, paprika, onion powder, and salt. Dip tofu slices into olive oil, then bread crumb mixture, patting lightly to coat well.
  3. Bake on a cookie sheet in preheated oven for 30 minutes. When first side is golden brown and slightly crispy, turn over, and finish baking.
  4. Meanwhile, mix together mayonnaise, relish, and lemon juice until well-blended. When tofu is nearly done baking, brush each bun half with olive oil, and toast in the oven. Serve with tartar sauce and your favorite sandwich condiments.

Hot and Spicy Tofu

"Firm tofu, bell pepper, and red onion, all quickly stir fried in a sweet and sour sauce. A word of caution - this is VERY spicy! If you like milder dishes, decrease the amount of pepper flakes or omit them altogether."

Ingredients

  • 3 tablespoons peanut oil
  • 1 pound firm tofu, cubed
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 green chile pepper, chopped
  • 3 cloves garlic, crushed
  • 1/3 cup hot water
  • 3 tablespoons white vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon crushed red pepper flakes

Directions

  1. Heat peanut oil in a wok or large frying pan over medium-high heat. Toss the tofu into the oil, and cook until browned on all sides. Once browned, toss in onion, bell pepper, chile pepper, and garlic; cook until just tender, about 5 minutes.
  2. In a small bowl, whisk together the hot water, vinegar, soy sauce, brown sugar, cornstarch, and red pepper flakes. Pour over tofu and vegetables, toss to coat, and simmer 3 to 5 minutes, or until sauce thickens slightly.
