"This is a quick and refreshing no cook vegetarian meal. Basil, mozzarella and tomato on Italian bread. Great for those hot summer evenings when you don't feel like cooking."

Ingredients

  • 1 (1 pound) loaf Italian bread
  • 6 fresh basil leaves, chopped
  • 2 tomatoes, sliced
  • 4 ounces fresh mozzarella cheese, sliced
  • 1/8 teaspoon red pepper flakes
  • 1/2 cup balsamic vinegar

Directions

  1. Slice the loaf of bread in half lengthwise. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread. Cut into four sandwiches.
  2. In a small dish, stir together the balsamic vinegar and red pepper flakes. Use as a dipping sauce.

"This is a favorite vegetarian sandwich spread made with tofu. Makes a great sandwich filling or you can eat it with crackers."

Ingredients

  • 1 pound firm tofu
  • 1 stalk celery, chopped
  • 1 green onion, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice

Directions

  1. Drain the block of tofu, and freeze overnight. Thaw, and cut into quarters. Squeeze out any moisture by hand, then wrap in paper towels, and squeeze again. Crumble into a medium bowl.
  2. Add celery and green onion to the tofu. Stir in mayonnaise, soy sauce and lemon juice until well blended.

"A broiled sandwich, made of fresh seasoned tomatoes, with an Italian taste. A perfect match for soup."

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 4 ripe tomatoes, sliced
  • 3 tablespoons mayonnaise
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 3 tablespoons grated Parmesan cheese, divided
  • 4 slices bread, lightly toasted

Directions

  1. Preheat oven to broil.
  2. In a shallow bowl, whisk together the olive oil and vinegar. Marinate the tomatoes in the mixture, stirring occasionally.
  3. Meanwhile, in a small bowl, combine mayonnaise, parsley, oregano, black pepper and 4 teaspoons Parmesan cheese. Spread mixture on each slice of toasted bread. Place marinated tomatoes on 2 slices and sprinkle with remaining Parmesan cheese.
  4. Place on a baking sheet and broil for 5 minutes, or until cheese turns golden brown. Serve immediately, open faced or closed.

"These burritos are soooo good, you'll want to have them every night."

Ingredients

  • 2 (10 inch) flour tortillas
  • 2 tablespoons vegetable oil
  • 1 small onion, chopped
  • 1/2 red bell pepper, chopped
  • 1 teaspoon minced garlic
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 teaspoon minced jalapeno peppers
  • 3 ounces cream cheese
  • 1/2 teaspoon salt
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Wrap tortillas in foil and place in oven heated to 350 degrees F (175 degrees C). Bake for 15 minutes or until heated through.
  2. Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes stirring.
  3. Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.
  4. Spoon mixture evenly down center of warmed tortilla and roll tortillas up. Serve immediately.

Ingredients

  • 1 (12 ounce) package extra firm tofu
  • 3 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 1 1/2 cups barbecue sauce
  • 6 hamburger buns

Directions

  1. Drain the tofu between paper towels until most of the water has been squeezed out.
  2. Slice tofu into 1/4 inch thick slices.
  3. Heat vegetable oil in a large skillet, fry tofu strips until golden brown on both sides. Add onion and cook for a few minutes, until onion is at your desired consistency.
  4. Pour in barbeque sauce (use more or less, according to your taste). Cook the mixture for ten minutes on low and serve on buns.

Ingredients

  • 1/3 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon minced garlic
  • 6 portobello mushroom caps
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 2 tablespoons chopped fresh basil
  • 6 kaiser rolls, split, toasted
  • 1 tablespoon butter
  • 6 leaves lettuce
  • 6 tomato slices

Directions

  1. Preheat an outdoor grill for medium heat, and lightly oil the grate. Whisk together the balsamic vinegar, olive oil, and garlic in a small bowl.
  2. Arrange the portobello mushrooms gill-side up on a tray or baking sheet. Brush the mushrooms with some of the vinegar mixture, and allow to marinate for 3 to 5 minutes.
  3. Place the marinated mushrooms on the preheated grill, gill-side down. Grill mushrooms until tender, brushing both sides of the mushrooms with the remaining marinade, about 4 minutes on each side.
  4. Mix the mayonnaise, dijon mustard, lemon juice, and basil in a small bowl. Butter the toasted kaiser rolls, then spread with the mayonnaise mixture. Divide the mushrooms, lettuce, and tomato slices evenly to make 6 sandwiches.

"Roasted eggplant in a French roll with feta cheese, basil and garlic mayonnaise. This was my favorite sandwich of all time, adapted from a cafe at the University of California, Irvine."

Ingredients

  • 1 small eggplant, halved and sliced
  • 1 tablespoon olive oil, or as needed
  • 1/4 cup mayonnaise
  • 2 cloves garlic, minced
  • 2 (6 inch) French sandwich rolls
  • 1 small tomato, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh basil leaves

Directions

  1. Preheat your oven's broiler. Brush eggplant slices with olive oil, and place them on a baking sheet or broiling pan. Place the pan about 6 inches from the heat source. Cook under the broiler for 10 minutes, or until tender and toasted.
  2. Split the French rolls lengthwise, and toast. In a cup or small bowl, stir together the mayonnaise and garlic. Spread this mixture on the toasted bread. Fill the rolls with eggplant slices, tomato, feta cheese and basil leaves.

Ingredients

  • 2 thick slices whole wheat bread
  • 2 tablespoons cream cheese, softened
  • 6 slices cucumber
  • 2 tablespoons alfalfa sprouts
  • 1 teaspoon olive oil
  • 1 teaspoon red wine vinegar
  • 1 tomato, sliced
  • 1 leaf lettuce
  • 1 ounce pepperoncini, sliced
  • 1/2 avocado, mashed

Directions

  1. Spread each slice of bread with 1 tablespoon cream cheese. On one slice of bread, arrange cucumber slices in a single layer. Cover with sprouts, then sprinkle with oil and vinegar. Layer tomato slices, lettuce, and pepperoncini. Spread other slice of bread with mashed avocado. Close sandwich and serve immediately.

  • 2 slices white bread
  • 2 slices American cheese
  • 2 teaspoons brown sugar
  • 2 teaspoons softened butter

Directions

  1. Heat a skillet over medium heat. Spread butter onto one side of a piece of bread and place butter side down in the skillet. Place one piece of cheese on top of the bread, then sprinkle with brown sugar. Top with the other slice of cheese. Butter the other slice of bread and place on top with the butter side up. Fry on each side until golden brown, 3 to 5 minutes per side.

"This is a great vegetarian sandwich that even meat-lovers will like! I came up with this idea after having an asparagus sandwich at a restaurant that my husband and I both loved. It is quick and easy and so yummy!"

Ingredients

  • 1 bunch fresh asparagus, trimmed
  • 1 red bell pepper, seeded and quartered
  • 1 tablespoon olive oil
  • 3 hoagie rolls
  • 6 ounces shredded Swiss cheese
  • 1 ripe tomato, sliced
  • 3 tablespoons mayonnaise
  • 2 tablespoons lemon juice
  • 1 teaspoon minced garlic

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Toss asparagus and red pepper with olive oil. Place on a lined baking sheet and bake until tender, about 10 minutes. Once cool enough to handle, remove skin from the pepper and slice into strips.
  3. Cut hoagie rolls in half, place on a baking sheet, and toast lightly in the oven. Remove rolls from the oven and sprinkle each half with cheese. Place 4 to 5 asparagus spears and a few strips of pepper on one side. Place slices of tomato on the other side of the roll. Place the hoagies back in the oven until the cheese is melted, about 5 minutes.
  4. Meanwhile, in a separate bowl, mix the mayonnaise, lemon juice, and garlic together. Spread the dressing on one side of the roll and close sandwich.

  • 4 slices whole wheat bread, toasted
  • 1/2 (8 ounce) package cream cheese, room temperature
  • 1 medium tomato, sliced
  • 1 (5 ounce) package alfalfa sprouts
  • 1 cup shredded mozzarella cheese

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Line a cookie sheet with aluminum foil. Spread cream cheese onto each slice of bread, and set cheese side up on the cookie sheet. Place the tomato slices over the cream cheese. Top with alfalfa sprouts, then a generous sprinkle of mozzarella cheese.

  • 1 cinnamon-raisin English muffin, halved
  • 3 baby carrots, shredded
  • 1 pinch ground nutmeg
  • 1 tablespoon crunchy peanut butter
  • 1 tablespoon whipped cream cheese
  • 1/4 cup clover sprouts (optional)

Directions

  1. Lightly toast both halves of English muffin.
  2. Place shredded carrots in a small bowl and sprinkle with nutmeg.
  3. Spread peanut butter on one side of English muffin.

"A local restaurant used to serve a version of this sandwich but when they discontinued it, I experimented and made it better with the addition of dry roasted sesame seeds and using English Muffins instead of whole wheat bread. Garnish each with a black olive, if desired."

Ingredients

  • 4 English muffins, split and toasted
  • 1 avocado, mashed
  • 1 cup alfalfa sprouts
  • 1 small tomato, chopped
  • 1 small sweet onion, chopped
  • 4 tablespoons Ranch-style salad dressing
  • 4 tablespoons toasted sesame seeds
  • 1 cup shredded smoked Cheddar cheese

Directions

  1. Preheat oven to broil.
  2. Place each muffin open-faced on a cookie sheet. Spread each half with mashed avocado; place halves close together. Distributing ingredients evenly, cover each half with sprouts, tomatoes, onion, dressing, sesame seeds and cheese.
  3. Place under broiler for about 5 minutes, or until cheese is melted and bubbly.

"This grilled cheese sandwich has a garden twist."

Ingredients

  • 1 tablespoon butter, softened
  • 2 slices bread
  • 2 slices sharp Cheddar cheese
  • 1 tablespoon chopped parsley
  • 1 teaspoon chopped basil
  • 1 teaspoon oregano
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh dill

Directions

  1. Spread 1/2 tablespoon of butter on one side of each piece of bread. Lie the slices of Cheddar on one of the slices of bread on the unbuttered side. Sprinkle the parsley, basil, oregano, rosemary, and dill on the other slice of bread on its unbuttered side. Sandwich the two slices of bread together with the buttered sides facing outwards.
  2. Heat a skillet over medium heat. When skillet is hot, gently lie the sandwich in the skillet; cook on each side for 3 minutes until cheese has melted.

"This combines my love of the New Orleans-style olive salad that you find on muffaletta sandwiches and Italian olive tapenades. With so many olives how could you go wrong? I use it on fish, sandwiches, dips, and in herbed breads."

Ingredients

  • 1 (6 ounce) can black olives, drained, brine reserved
  • 1 (6 ounce) can pimento-stuffed green olives, drained, brine reserved
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 1 onion, chopped
  • 3 stalks celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon capers, rinsed and chopped
  • 1/4 cup Italian dressing
  • 2 tablespoons reserved olive brine, or as needed
  • salt and ground black pepper to taste

Directions

  1. Place the black olives, pimento-stuffed green olives, artichoke hearts, onion, celery, garlic, and capers in the bowl of a food processor. Pulse until the ingredients are uniform in size, and no larger than a popcorn kernel. Stir in the Italian dressing. Add equal amounts of green and black olive brine as needed for a moist consistency. Season with salt and black pepper. Chill in the refrigerator for at least 12 hours before serving.

  • 1 onion, halved and thinly sliced
  • 6 tablespoons mayonnaise

Directions

  1. Place half of the cocktail rye bread on a clean work surface. Spread each slice with cream cheese.
  2. Place 1 or 2 slices of cucumber on each, and then 1 or 2 slices of onion.
  3. Spread remaining slices with mayonnaise and place atop onions to complete the sandwiches.

  2. Unwind the roll dough, and separate into 4 rectangles. Pinch together perforations to seal. Place 2 rectangles on a 9x13 inch baking sheet. Moisten edges of rectangles with water. Place 2 slices mozzarella on each rectangle. Top each with 2 teaspoons tomato paste. Sprinkle each with 1/4 teaspoon oregano. Cover each with remaining dough. Press the edges firmly with a fork to seal.
  3. Bake in the preheated oven 10 to 12 minutes, or until golden brown.

Baked Eggplant Sandwiches

"There are sandwiches, there are sandwiches with eggplant... and there are Eggplant Sandwiches! Who needs bread anyway?"

Ingredients

  • 2 tablespoons olive oil, divided
  • 2 cups panko bread crumbs
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 cup all-purpose flour
  • 1 egg
  • 1/4 cup water
  • 1 large long eggplant, cut crosswise into 1/3 inch thick slices
  • 1/2 cup finely chopped onion
  • 3 cloves garlic, minced
  • 5 ounces fresh goat cheese
  • 1 cup shredded sharp provolone cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil leaves
  • ground black pepper to taste
  • 1/2 cup pomegranate molasses

Directions

  1. Preheat the oven to 450 degrees F (230 degrees C). Coat two large baking sheets with olive oil.
  2. In a medium bowl, stir together the panko crumbs, salt and 1/2 teaspoon pepper. In another bowl, whisk together the egg and water. Place the flour in a third bowl. Coat each slice of eggplant with flour, shaking off the excess, then dip into the egg, and finally coat with panko crumbs. Place on the oiled baking sheets.
  3. Bake for 12 minutes in the preheated oven, then turn over the slices and bake for an additional 12 minutes, or until golden brown. Remove from the oven and cool slightly, but leave the oven on.
  4. While the eggplant is baking, heat 1 tablespoon of oil in a skillet over medium heat. Add the onion; cook and stir until almost tender, then add the garlic. Cook for just about 1 minute. Remove from the heat and stir in the goat cheese, provolone cheese, parsley and basil. Season with pepper.
  5. Divide the cheese mixture among 8 slices of the eggplant (half). Spread to cover, then top with remaining eggplant slices, pressing to compact. Return to the baking sheets.
  6. Bake in the preheated oven until eggplant is crisp, about 15 minutes. Place two sandwiches onto each serving plate, and drizzle with pomegranate molasses.
